Cooking With Chronic Pain: Roasted Parmesan Cauliflower

Not my recipe, belongs to Pillsbury. Simple and easy side dish to make for dinner. Tastes great with a little kick from the red pepper flakes. I added a little bit of garlic powder just because I love garlic. 

Ingredients:

- 5 cups of Cauliflower Florets

- 3 tbsp Olive Oil

- 1/4 tsp Salt

- 1/4 tsp Black Pepper

- 1/8 tsp Crushed Red Pepper Flakes

- 1/2 cup Shredded Parmesan Cheese

- Top with Fresh Parsley if desired 

Directions:

1. Preheat oven to 400 degrees. Spray a cooking sheet with cooking spray.

2. In a large bowl, mix cauliflower, olive oil, salt, black pepper and red pepper; toss to coat.

3. Spread throughout the pan. Roast for 20-25 minutes, stirring occasionally until cauliflower is tender and golden brown. Remove from oven, toss with Parmesan cheese and garnish with Parsley.

**Notes: I didn't have shredded Parmesan cheese so I used grated instead and it still tasted great. Also not everyone has fresh parsley on hand so grated parsley from the cabinet works too**
